I'm wondering if anyone can explain how the backup of our sims work? How do we do it exactly? What will be backed up? Does content we have purchased but don't have full perm rights to get backed up? How do we recover the backup if needed? Do these backups work different than if we hosted our own sim somewhere and had to restore it?

Hi Kachja,
Kitely creates automatic daily backups and keeps them for up to two weeks. You don't need to do anything for this to be enabled.
Each automatic backup contains an exact copy of your world(s) and everything it contained at the time the backup was made (regardless of item permissions).
You'll need to contact me via email or using a forums PM if you wish to restore one (or more) of your world(s) to a previously saved state.
You can also create your own backups of your world(s) at any time using the Copy links in your My Worlds page. Copies of worlds created this way will not ignore item permissions and may therefore be partial. However, they will have the benefit of allowing you to keep them indefinitely, visit them, etc. without rolling back your world to a previous state.
