To change the region's inworld maturity rating in Firestorm, go to World > Region Details, then click on the Region tab.
The maturity rating drop-down menu is about two-thirds of the way down.

Just to complete the picture, there are currently two maturity rating systems in Kitely: the website-based one and the inworld one. The website-based one will limit access without changing the inworld-based one. However, if you change the world's maturity rating via the website and want the region to show the correct maturity rating in the viewer then you'll need to change that value inside your viewer as well.
Synchronizing these two separate systems is on our todo list.
